Classic French style wedding and celebration cake. Creme patissiere filled profiteroles dipped in caramelised sugar which when set gives the cake its name 'crunch in the mouth'. Decorated traditionally with nougatine curls and sugar almonds with an optional spun sugar veil, or alternatively with fresh berries and nougatine berrie basket for a summer feel.
