Carrots are a firm favourite amongst bakers. Not only because they’re tasty and offer a lot of versatility, but they’re also highly nutritious. These are lighter than a moist carrot cake, but still include a helping of grated carrots for the health-conscious! Courgettes are another great vegetable to bake with. They are a great source of vitamin C as well as potassium and have been linked to healthy digestion. Although an unlikely known vegetable to include in sweet treats, courgettes can deliver some amazing results.
