Bakery Production Unit Manager

Job Title: Bakery Production Unit Manager

Reports to: General Manager

Purpose of Role:

To manage all operational aspects of production from materials receipt through to finished product despatch, to enable our internal and external customers to be supplied on time, to quality, quantity and food safety/health and safety standards, whilst minimising the cost of manufacturing


  • Managing a team; Production staff and associated functions within the business, ensuring all areas of accountability are achieved, with a high visibility in the bakery promoting a culture of achievement and responsibility.
  • Manage weekly rota to ensure production plan is achieved within an agreed set budget
  • Recruits and develops an effective production team in line with manpower and succession plans.
  • Creates and establishes ownership for product excellence, ensuring products are regularly monitored for taste, appearance and quality, and potential improvements are identified within cost targets.
  • Improve efficiencies and capacity with the ability to implement and deliver effective change
  • Develop new products and deliver accurate costings.
  • Control the ordering of the bakery ingredients and waste control
  • Develops and promotes brand standards and harmonisation, actively contributing to group meetings to achieve business objectives.
  • Monitors food safety and health and safety practices within the bakery ensuring compliance with brand standards and minimising areas of risk to the business

Experience / Qualifications

  • A qualification or professional competence in baking is essential, (city and guilds bakery)
  • Experience of managing and delivering staff training.
  • Experience of creating a positive food safety culture and managing culture change
  • Previous Management Experience within Food Manufacturing is essential.
  • Ability to give attention to detail and prioritise a busy workload
  • Ability to use own initiative or work as part of a team
  • Commercial awareness and good knowledge of operational processes.
  • Ability to challenge and make effective decisions
  • Computer literate
