Job Title: Assistant Production Manager
Location: Edinburgh Bakery
Responsible To: Production Manager

Main Purpose of Position

To assist in the manufacturing of our product range to deliver a timely and accurate service to our customers. At all times supporting Production Manager in delivering business KPIs by observing the relevant policies and procedures on:

  • Health & Safety
  • Food Safety & Hygiene
  • Quality
  • Cost
  • People
  • Service

Key Accountabilities

Food Safety& Hygiene

  • HACCP understanding / CCP monitoring/completion
  • Food safety procedures (trained and understood/delivered to team)
  • Hygiene- ensuring this meets standard required


  • Pre-start check sheets for all your lines are to be completed accurately and prior to production starting without compromising the integrity of the safety of the equipment. Raise non-compliances to Manager. File pre-start check sheets correctly.
  • Identify any changes to process that requires a review of any pre-start check and report to the Manager.
  • Identify all hazards and report near misses as per the H&S policy.Encourage team to raise hazard and near miss reports
  • Report accidents to your Manager


  • Be a ‘Product Quality Champion’ – Actively look for and identify quality issues and notify PMLiaise with QA on product quality.
  • Identify sub-standard product, isolate and inform Manager of actions you have undertaken to:
  • Ensure all product produced must follow the technical specification and any discrepancies identified are raised to the Manager.
  • Ensure that all raw materials, products and processes adhere to the company traceability throughout your area.
  • Taste panel attendance


  • To be able to train new starters to fulfil roles required in your area.
  • Train team against SOP’s.
  • Full knowledge of changeover times between product types, including allergen cleans, and ability to adhere to planned timings.
  • Team to have full understanding and to deliver GMP standards on lines.
  • Basic Line Maintenance:
  • Identify faults and report to Manager of through work request forms.
  • Register / holidays in absence of Manager?
  • Ensure correct PPE is worn


  • Able to manage labour and understand the impact of over usage on cost
  • Agree with Manager optimum number of people for each product run.
  • Operational Specifications to be followed.
  • Ensure 100% completion and compliance of paperwork.


  • Identify and rectify key areas of waste on the production line/process.
  • Record waste figures as required on waste sheet.
  • Ownership of waste segregation.


  • Able to communicate effectively with internal customers and suppliers
  • Ensure all plans are correctly completed in a timely manner with all necessary information written out in full.
  • Report to Manager immediately any issues which may result in shortage against plan, and work with Manager to pull back lost time.
  • Ensure all downtime and lost time is reported accurately.
  • Completion of plan attainments

Person Specification:

  • Ability to effectively lead a team.
  • Fully trained on line/area – 100% signed off on training matrix.
  • Effective Communication skills, both written and verbal at all levels, including customers and senior management.
  • Good decision making and problem solving skills.
  • Ability to work well under pressure.
  • Level 1 Food Hygiene Certificate.
  • Level 1 Food Award in Food Safety for Manufacturing
  • Online Allergen Awareness Certificate.
  •  HACCP basic training received
